SWEET TAMARIND CHUTNEY

This is my third chutney recipe special. Today I will show 2 chutney recipe, one is - Green Chutney and another is - Sweet Tamarind Chutney.


GREEN CHUTNEY -  

Green chutney is a blend made of green chilis, coriander leaves and mint leaves. It is served with Indian snacks, sandwiches and chaats. It enhances the taste of foods and also helps in digestion.


INGREDIENTS - 

Coriander Leaves - 1 cup

Mint Leaves          - 1/2 cup

Green Chili           - 1

Lemon Juice         - 2 tsp

Salt                       - as per taste

Water                    - as required

PROCESS - 

Grind all the ingredients with some water. 

Our Green Chutney is ready.

Serve it with samosa, pakora, chaat etc.

SWEET TAMARIND CHUTNEY - 


Tamarind tastes strongly sour. So sugar or jaggery, dates are added  to mellow it out, along with some spices. Sweet Tamarind Chutney is popular in India as a dressing for many snacks, like - dahi bhalle, dahi vada, samosa chaat, pani- puri etc. This chutney is slightly thick with a smooth texture.

INGREDIENTS - 


Tamarind - 1 cup(seedless)

Dates - 1/2 cup (optional)

Jaggery - 1 and 1/2 to 2 cup

Dry Ginger Powder (saunth) - 1/2 tsp

Roasted Cumin Powder - 1 tsp

Garam Masala Powder - 1 tsp

Kashmiri Red Chili Powder - 1/2 tbsp

Salt - as per taste

Black Salt - 1/2 tsp

Water - 2 cups


PROCEDURE - 

  • Boil the tamarind and dates in water.

  • When they become soft add the jaggery and the spice powders and salt.
  • Cook further till the jaggery melts.
  • Switch off the burner and let it cool.
  • Grind the chutney mixture to a smooth paste.
  • Sieve the chutney through a strainer.

Our Sweet Tamarind Chutney is ready to serve.

In my video I don't add date and saunth powder because of unavailable this item in this period. But you must use saunth powder for the taste and flavour. If it is unavailable for you then skip them. Till it's taste better (chatpata).
