A TRADITIONAL SWEET DISH 

FROM ODISHA

ARISA PITHA is a traditional sweet recipe of Odisha. This Pitha is basically made up of Rice and Jaggery or sugar. It is crispy from outside and soft insides.


In Western Odisha the people make varieties of pithas in their Nuakhai Festival. Arisa Pitha is one of them. It is prepared by all Odias on every occasions like - Mahalaxmi Puja, Dussehra, Nuakhai, in wedding ceremonies etc.


This recipe is made by my mom and it is dedicated to all my odia friends and my viewers.

So, let's learn how to make Arisa Pitha :-

 INGREDIENTS

Arua Rice - 1/2 kg

Jaggery - 300 grams

Water - 1 cup

Sesame Seeds - 2 tbsp

Oil - for deep frying

PROCEDURE - 

Soak the rice in water for whole night. Wash it and drain all the water. Spread the rice in a cotton cloth and dry it under the fan for 2-3hrs. After 3 hrs the rice becomes dry. Then grind it to make a powder. So,our rice flour is ready. 

Then we heat a kadhai on medium flame and melt the jaggery with 1 cup of water. Then bring it to boil.

As you go on stirring on medium flame,the boiling water forms a syrup. The syrup should be consistent.

To know that,the syrup is ready or not,take 1/2 cup of water in a bowl and put a drop of syrup. If it dissolves in water then it is not ready,stir it again for 5-7 min. Again check the syrup,if it doesn't get dissolved in water and form like chocolate,then it is ready to make the pitha.

Then slowly add rice flour to the syrup and stir it continuously to form a batter. After the batter is ready,place it in a plate or thali and allow it to cool for 5 min (do not cool it completely).

Then grease your palms with a little oil. Take a small portion of batter and make a ball, now flatten it with your palms. Spread some sesame seeds on both sides of the pitha.

Heat oil in a kadhai at medium flame. Then deep fry the pithas till they become golden brown. Take them out,in this way we will make all the pithas.

                                                      

So,our Arisa Pitha is ready. You can try to make it,it is very tasty. You can preserve it for 1 month.


(TIPS:- You can add cardamom powder to enhance it's fragrance).
