SABUDANA KHICHADI


SABUDANA is a starch extracted from tapioca roots. It keeps your Blood Pressure low and controlled. It is a rich source of vitamin b6, folate and potassium.

Sabudana is considered to be a healthy non-cereal food source and therefore forms a significant part of Hindu fasting rituals. It is rich in good carbs, fiber and calcium. It also helps to prevent digestion issues, relieves gas, bloating and constipation.

Sabudana is full of starch and is great for a quick boost of energy. It is easily digested , that is why it is a good option for breaking fasts during festivals like Shravan Sombar, Navratri etc.

Sabudana Khichadi is an Indian dish made from sabudana, cumin seeds, rock salt (sendha namak), red chili powder, potatoes and peanuts etc. It is typically prepared in parts of western India. It is a light food so we also take it in our breakfast.

INGREDIENTS - 

Sabudana             - 1 cup
Peanut                  - 1/2 cup
Potato                   - 1 (cut into small cubes)
Ghee                     - 2 tbsp
Cumin Seeds        - 1 tsp
Red Chili              - 3
Curry Leaves        - 1 stem
Sendha Namak     - 1 and 1/2 tsp
Chili powder        - 1 tsp
Coriander Leaves - 1 tbsp
Sugar                    - 1 tsp
Turmeric Powder  - 1/2 tsp (optional)
Lemon Wedges     - 1 piece

PROCESS - 

Soak sabudana for at least 3 to 4 hours. Wash it properly.

Heat 2 tbsp ghee in a kadhai. Add cumin seeds, curry leaves, red chili and saute for 1/2 a minute.

Add peanuts and fry for 1/2 a minute.Then add potato, sendha namak, chili powder and fry for 2 minutes.

Add sabudana and fry for a minute.Then add 2 cups of water and sugar and cook for 4 to 5 minutes on medium flame.

Our Sabudana khichadi is ready. Garnish with Coriander Leaves.

Serve Sabudana Khichadi hot with lemon wedges.
