GOBI MUSALLAM
GOBI MUSALLAM is a fantastic North Indian recipe for parties, dinner etc. In this recipe the whole cauliflower is lightly blanched with some salt and turmeric powder. Then it is cooked in a makhani gravy or sauce.The texture of the sauce is creamy, buttery. It is very rich with cashewnut paste.
Musallam is a Mughal word which means whole and this dish is a whole gobi. You can serve it with roti, rice, naan etc. It is absolutely delicious and an interesting way to enjoy cauliflower.
For cooking fast chop the cauliflower into florets and blanch for 3 to 4 minutes. Then cook in the sauce for 15 minutes.
INGREDIENTS -
- Cauliflower - 1 whole (500 gms)
- Onion Paste - 1 (medium sized onion)
- Ginger Garlic Paste - 1 tbsp
- Tomato Puree - 1 (big size tomato)
- Cashewnut Paste - 2 tbsp
- Coriander Powder - 1 tbsp
- Red Chili Powder - as per taste
- Bay Leaves - 2
- Black Cardamom - 1
- Green Cardamom - 2
- Kasuri Methi - 1 tsp
- Oil - 2 tbsp
- Coriander Leaves - 1 tbsp
- Fresh Cream - 2 tbsp
First wash cauliflower well. Cut around the core of cauliflower. Boil water in a kadhai with some salt and turmeric powder. For 5 minutes boil the cauliflower in this water. Flip the cauliflower to other side and boil for another 5 minutes. Strain it and keep aside.
As this is not the season for cauliflower. This is the reason, why good quality cauliflower is not available in the market now a days. And therefore I cut it in to florets (small pieces) and made this recipe.
Heat oil in a kadhai. Add whole spices (bay leaves, black cardamom, green cardamom). Saute for half a minute. Add onion paste and fry for 2 minutes. Add ginger garlic paste and fry for 1 minute. Add tomato puree and fry till the raw smell goes out from the masala. Add turmeric powder, red chili powder, coriander powder and fry until oil separates from the masala. Add cashewnut paste, garam masala powder and salt. Fry for 2 minutes. Add some water (1 cup) and cauliflower. Cook for 2 to 3 minutes. Add fresh cream to it, mix it well. Add kasuri methi and mix it. Cover and cook for 10 minutes.
Serve it with roti or rice. Garnish with fresh cream and coriander leaves.
(NOTE -To be sure that your cauliflower is worm free, you can keep it in salted water for 5 minutes before steaming.)
